Science-forward craft brewing

Inside the Lab

Where creativity meets analytical rigor. We brew transparently and share our process so enthusiasts and brewers can learn, replicate, and iterate.

Saskatoon Beer Lab is a microbrewery founded by scientists and self-proclaimed nerds with a shared passion for beer and innovation. Our approach blends the craft of brewing with the precision of measurement. Transparency sits at the core, we practice open-source brewing, publishing recipes and analytics for anyone to explore.

Our in-house lab sets us apart. With a High-Performance Liquid Chromatograph (HPLC) and an Inductively Coupled Plasma Optical Emission Spectrophotometer (ICP-OES), we analyze bittering compounds, off-flavours, aroma profiles, and water quality to ensure every batch meets exacting standards.

Instrument-Driven
  • Methodical brewing. Trials, controls, and reproducible notes because delicious should also be defensible.
  • Dialed-in water. Mineral profiles tuned to style; consistency locked in batch-to-batch.
  • Analytical checks. Bittering, aroma, and trace metals validated with lab instrumentation.
  • Sustainability-minded. Spent malt becomes nutrient-rich flour. Value-added, not waste.

A different glass of beer.

Beyond great beer, we focus on value-added products. We transform spent malt into nutrient-dense flours for human consumption, an approach that advances sustainability while unlocking new culinary uses. At Saskatoon Beer Lab, we’re not just brewing; we’re pushing the boundaries of what’s possible in craft beer.
